A day and a half of soaking in brine will maximize this flavorful dish.

Beer Brined Turkey

Preheat oven to 375°F.

Rinse the turkey breast and pat dry with paper towels.

Make 4 incisions into the turkey breast and insert the garlic cloves.

Place the sage sprigs and then the slices of bacon across the top of the breast.

Tie with butchers twine to hold the bacon in place while roasting.

Drizzle with olive oil and season with salt and pepper.

Place into oven bag, put into oven and roast for 1 hour 30 minutes or until internal temperature reaches 165°F when taken at the thickest part of the filet.

Remove from oven.

To serve, remove twine and slice on the bias.
