MIX ham, broccoli and water in large skillet. Bring to boil on medium-high heat; cover. Cook on medium heat 3 min.
ADD rice and VELVEETA; mix well. Cover. Remove from heat. Let stand 7 min.
STIR until VELVEETA is melted.
How to Freeze Fresh Broccoli: Cut leftover fresh broccoli into florets and stems into small pieces. Add to boiling water; cook 3 min. Drain broccoli, then immediately place in ice cold water to stop the cooking process; drain. Freeze in resealable freezer-weight bags for up to 3 months.
Substitute: Prepare using frozen broccoli florets.
